Frank J. (Joey) Milan:  Chief Executive Officer

For more than 25 years, Mr. Milan has been engaged in concept development and operations of several Entertainment Complexes, Restaurants and Hotels in several markets throughout the United States, some of which were touted as the highest grossing per square foot in the country. Milan has held the positions of Director of Operations, Vice President, Executive Director and President. Additionally, Milan was very involved in the development and operation of Cabo “The Original Mix-Mex Grill” taqueria concept in Houston and Fort Worth in the late 90’s until the concept was sold in 2001. Milan currently holds an equity ownership position with Lucile’s Bistro and The Stockyards Hotel/H3 Ranch Steakhouse in Ft. Worth.

Jeffrey V. Payne:  Chief Operating Officer

Mr. Payne followed in his father’s footsteps and chose a career in the restaurant and hospitality industry in 1980. Over the last 30 years Jeff has managed and developed several cafeterias, restaurant concepts and catering businesses throughout the Dallas-Fort Worth area. Most recently, Jeff holds an equity position and serves as CEO and President of the family’s BBQ business which consists of three restaurants in Tarrant County neighborhoods and two units in DFW Airport along with a BBQ commissary.

Richard Rivera:  General Manager, Corporate Chef

The majority of Mr. Rivera’s culinary training was learned and applied through hands on training as a cook, sous chef, chef and kitchen manager in various restaurants. His Cuban heritage and upbringing in the Miami area introduced him to a diverse collection of cooking methods, spices and food products. As Corporate Chef for the Yucatan Taco Stand for 2 years, Richard developed their menu of gourmet tacos, burritos and a variety of Mexican fare in a high volume environment. He was also responsible for designing the kitchen layout, selecting equipment, training staff and management, and opening four units for their expanding company. Rivera will serve as Corporate Chef for Digg’s Franchise Systems, Inc. to assist in menu/recipe development, kitchen layout/design and the hiring/training of kitchen personnel.
